Chickpea Pancakes - won't taste like chickpeas

Ingredients

  • 1 egg
  • 1 tbsp olive oil
  • 1/4 cup water
  • 1 cup Chickpea bread blend
  • 1/2 tsp baking powder

Instructions

  1. Heat a ceramic (ideally) non-stick sauce pan on medium heat and add a very little coconut oil / butter / ghee / ghee spray if desired.
  2. Whisk together eggs, oil, water in a medium bowl.
  3. Add in 1 cup of flour blend and baking powder. Add a little water if mixture is too thick.
  4. Pour batter into sauce pan. When small holes start to appear on the side of pancake facing you wait for a few more holes than turn it around and cook for one more minute. Repeat till you have batter.
  5. You can make about 4 from this portion and about 12 from the whole bag.
