Veggie Strata / Bread Pudding

Savory (Veggie) Bread Pudding



  • 1 tbsp butter / ghee / coconut oil
  • 6 oz of mushrooms chopped into small cubes
  • 6 eggs
  • 1/2 cup non-dairy milk
  • 1 tbsp Dijon mustard
  • 1/2 tsp nutmeg
  • 1 tsp himalayan salt
  • 1/4 tsp ground black pepper
  • 4 green onions finely chopped OR 2 shallots, finely chopped
  • 1 1/2 cup spinach
  • 1/2 loaf collagen chickpea bread sliced and cubed
  • 4 oz freshly shredded Gruyere cheese or your choice of non-dairy cheese



  1. Grease an 8x8 heat resistant casserole / baking dish with your choice of fat: butter, coconut oil, ghee.
  2. Heat 1 tbsp butter / ghee / coconut oil in saucepan.
  3. Sauté mushrooms till soft, 4-6 minutes.
  4. In a large bowl whisk together eggs, milk, spices, green onions.
  5. Fold in spinach, suited mushrooms, cubed bread and half of the cheese. Mix well.
  6. Pour into casserole / baking dish and sprinkle with the rest of the cheese. If you can let it sit in the fridge for a few hours. If like, you can place it into the fridge overnight. So that you can just pop it to the oven on the day of your celebration!
  7. Bake it on 400F for 30 minutes.
