Tigernut Cookies

This super simple 3-ingerdient cookie is free of all allergens, is paleo, keto and SO delicious! We love making them for Easter, using out bunny shaped cookie cutters!


  • 1 cup tigernut flour
  • 1/4 cup ghee / butter / Earth Balance spread
  • 1/2 tbsp maple syrup (optional)


  1. In a medium bowl mix together all ingredients. You can use a handheld mixer, but at the end you will need to dig in with your hands to create an even dough.

  2. Shape it into a ball and place it on a parchment paper. Cover it with another sheet of parchment paper and roll it out. Cut out shapes using cookie cutters or a cup.

  3. Place cookies on a parchment paper lined baking / cookie sheet and bake on 350F (I prefer convention) for 9 minutes. Start watching around 7 minutes so that they don't burn. They are done when they start to turn a tad light brown. They are brittle when warm so wait till they are fully cooled.

  4. Decorate if you wish or just enjoy “bare”. We never make it to the phase of decorating 🙂
