Pumpkin Chocolate Chip Muffins

Ingredients

Ingredients:

  • 9 medjool dates or 13 regular dates
  • 1/4 cup chia seeds
  • 1/2 cup water
  • 1/2 cup non-dairy milk
  • 1/4 cup ghee / coconut oil
  • 2 tsp vanilla extract
  • 3/4 cup pumkin puree
  • 2 1/4 cups tigernut flour
  • 1/2 cup tapioca flour
  • 2 tsp baking soda
  • 2 tsp pumpkin spice
  • 1/4 tsp salt
  • 1 tbsp apple cider vinegar
  • 1 cup chocolate chips

Instructions

Directions:

  1. Place medal dates, chia seeds, water, non-dairy milk, ghee and vanilla extract into your high powered blender and blend gradually till smooth.
  2. Add in pumpkin puree and blend one more time.
  3. In a large bowl mix together all dry ingredients and then pour in the “paste” from your blender.
  4. Mix together with a handheld mixer or spatula and finally blend in the apple cider vinegar.
  5. Fold in chocolate chips.
  6. Bake on 350F for 25 minutes. Resist the urge to eat them right away, wait 10 minutes for it to cool.
