Gingerbread Cookie / House Icing



  • 1 cup powdered sugar OR 1/2 cup powdered sugar and 1/2 cup tapioca powder
  • 1 egg white
  • 1 tbsp arrowroot / tapioca powder
  • 2-3 drops of lemon juice



  1. Beat egg white in a large bowl - ideally with a handheld mixer (on high) - till it forms solid peaks. It is solid enough when you turn the bowl over and it is not plopping out.
  2. Add in powdered sugar / tapioca and powdered sugar mix gradually, using your handheld mixer. If you feel iffy about using raw egg whites you can hold the bowl above steam (boiling water in a pot) to cook it a bit.
  3. Drop in lemon juice to give your icing a little shine.
  4. With a spatula transfer mixer into piping bag.
  5. if you would like to color your icing naturally you can use chlorella powder to make it green or beet powder to make it pink / reddish.
