Gluten Free Holiday Brunch Bundle Recipes
Happy Holiday Brunch vibes, lovely!
You can find recipes here how to transform a loaf of Chickpea or Collagen Chickpea Bread into a Brunch favorite. Both breads are baked exactly the same way. The Collagen one will be a bit fluffier, will have a more cake like consistency. This is why the sweet bread casserole I think is so much better from this version – the cubes soak up all the egg-y goodness!. The Ham and Cheese Casserole I suggest from the Chickpea bread is made from slices of bread, so the top layer is soooo nice and crispy. You could also cube most of the bread for this one, and maybe just use thin slices for the top to cover it all up. Just ideas for you to play with.
All recipes are grain, gluten, corn and soy free. In each recipe I offer substitutions to make it dairy free and / or egg free. All of them can be made vegan, besides the Ham and Cheese casserole, but of course you can sub out the ham with your favorite vegan savory topping.

– Waffle (vegan or not) (you can make 3 large one from 1/3 of the bag)
– Pancake (you can make 4 pancakes from 1/3 of a bag)
Collagen Chickpea Bread:
– Sweet Bread Pudding (needs a half a loaf)
– Veggie Strata / Mushroom-Spinach Bread Pudding (needs a half a loaf)
