Apple-Herb Stuffing

Apple Cranberry Stuffing

Ingredients

Ingredients:

  • 1/2 cup dried cranberries
  • 1/2 cup chicken or vegetable broth
  • 1/4 cup coconut oil
  • 2 cups onion (about 2 medium) chopped
  • 1 cup celery (about 2 thick stalks) chopped
  • 2 medium apples (about 2 medium) granny smith is best, chopped
  • 2 tbsp fresh thyme or 2 tsp dried
  • 1 tbsp fresh sage or 2 tsp dried
  • 2/3 loaf of chickpea bread
  • 2 eggs or chia egg
  • 1 tsp sea salt

Instructions

Directions:

  1. Soak cranberries in broth for an hour or two or as long as you can.
  2. Pre-heat oven for 350F.
  3. Slice and cube bread and put into oven for 5-10 minutes to make them crispy.
  4. Heat olive oil and sauté onions for about 5-10 minutes.
  5. Add celery and saute for 5 minutes.
  6. Add apples and herbs, sauté for 5-10 more minutes, till apples look soft.
  7. Transfer mix to a large bowl and mix it with bread cubes and soaked cranberries.
  8. Once it cooled off a bit mix in two eggs.
  9. Transfer into a 9x13 baking dish and bake uncovered on 350F for about 40 minutes - till cooked through and top is browned.
  10. Let is stand for 15 minutes.
